Ризотто с грибами

Сегодня меня попросилась на кухню отеля. Хозяин учил меня готовить РИЗОТТО с ГРИБАМИ и ТРЮФЕЛЕМ.

Пишу по порядку:
Сначал готовим Грибы (они эту смесь называют Дюксел).

1. 500 грн 2х видов грибов слегка помолоть в блендере
2. Потушить их минут 30-40 на оливковом масле, помешивая, на малом огне. Они должны выпустить влагу. Сначала под крышкой.
3. К концу добавить щипотку соли, снять больше крышку. Потом можно еще чуть соль и перец.

1. На сковороде потушить (огонь побольше): 1) оливковое масло 2 ст. л. 2) 2 шт. лука из блендера 5-10 мин. Потом добавить 3) 1 зубчик чеснока мелко порезаный.
Потом
4) 250 гр риса для ризотто и через 3 мин. 5) полстакана белого вина (100 гр). Когда вино испарится, добавить
— 800 грн гарячей кипяченой воды с кубиком бульйона по частям. Первую часть — покрыли рис водой. Продолжаем помешивать.
Добавляем Дуксел 300 гр. (грибы).

Потом 2 ст. л. трюфельного соуса.

Тушить помешивая.

До готовности альденте.

В конце уменьшаем огонь.

Добавляем 2 ст. л. сливочного масла.

Пару грибов тушим на отдельной сковороде на оливковом масле на большом огне (это украшение) параллельно. Минут 10. В конце щипотку соли и перца.

Добавляем 80 гр пармезана.

В самом конце накрываем крышкой и даем настояться.

Пару ломтиков пармезана нарезаем для украшения.
